Quick Tips

Because of the connection between white flour and diabetes and other health problems, I try to use mostly whole-grain flours in my kitchen.

I do NOT purchase wheat flour at the store, however, because store-bought wheat flour is radiated and chemically treated to keep it from spoiling.

Instead, I grind fresh wheat at home, then freeze any leftover flour to keep it from spoiling. With a grinder like the one demonstrated in the video below, you can also grind oats, spelt, kamut, rice, corn, or other grains–even beans!–to give a little variety to your baking!
